I received a new challenge - to do a Paleo carrot cake! I was given the recipe to use and then the hunt began for the special ingredients which included coconut flour, coconut oil, coconut butter, non sweetened dates, non salted cashews, maple syrup. Luckily I was able to find many of them at my local grocery store and the rest at a local health food store. I wasn't sure how great the cake would look considering the different in texture of the 'frosting' and cake. Surprisingly frosting made out of coconut smooths quite well. It's just about getting it to the right temperature.
